PREP METHOD:
Preheat the oven to 400℉.
Line a baking tray with parchment paper. Lay two strips of bacon side-by-side on the parchment paper. Lay two more strips of bacon, also side-by-side, perpendicularly across the first two, creating a “+” shape.
Tuck the upper strip under the second strip on the bottom. Next tuck the lower strip under the first strip on the bottom. This will start creating a basket weave. Weave one more strip of bacon on each side and again on the top and bottom.
Place the brie in the center of the woven bacon and carefully fold the bacon edges up and around the top of the brie. Once the brie is fully wrapped, flip it over so the woven side is facing upward.
Use a fork to whisk the jam in a small dish so it becomes spreadable. Pour the jam over the bacon and evenly spread it over the top and sides.
Bake the bacon wrapped brie for 25-35 minutes, or until the bacon is deeply browned.
Allow the brie to cool on the baking tray for 3-5 minutes then transfer to a cutting board before serving. Enjoy!
