Bacon Lovers Pizza Recipe from Uncle Frank's Backyard Kitchen

Bacon lovers, get ready for a game-changer! Uncle Frank’s Backyard Pizza is serving up a crispy bacon-wrapped crust, piled high with caramelized onions, potatoes, sausage, jalapeños, and—of course—more Tender Belly bacon on top.  This flavor-packed masterpiece will have you reaching for slice after slice.


Ingredients (1 pizza):

  • 5-7 mini red potatoes, thinly sliced
  • Salt and pepper, to taste
  • 1 package Tender Belly bacon
  • 1 ball of pizza dough (store-bought or homemade)
  • Olive oil, for drizzling
  • 1 ½ cups shredded mozzarella cheese
  • ½ small onion, thinly sliced
  • 1 cup cooked sausage (crumbled or sliced)
  • Additional salt and pepper for seasoning

Instructions:

1. Prepare the Potatoes:

  • Slice the mini red potatoes thinly and season with salt and pepper.
  • In a frying pan over medium heat, fry the potatoes until they are golden brown and crispy (about 10-12 minutes). Set aside.

2. Bake the Bacon:

  • Preheat your oven to 475°F (190°C).
  • Lay the Tender Belly bacon strips flat on a baking sheet and bake for about 7 minutes. The bacon should be partially cooked but still flexible. Remove from the oven and let cool until you can handle them.

3. Prepare the Dough:

  • Stretch the pizza dough into a large circle or rectangle on a baking sheet.
  • Using a knife, cut 1-inch slits all around the edge of the dough (about 1-2 inches apart).

4. Wrap the Bacon in the Crust:

  • Once the bacon has cooled slightly, take each strip of bacon and insert it halfway into one of the slits around the edge of the dough. Wrap the bacon around and tuck it into the next slit. Repeat this process until the entire crust is wrapped with bacon.

5. Par-Bake the Crust:

  • Par-bake the bacon-wrapped crust for about 5 minutes in the oven at 500°F. This will help the bacon and crust firm up.

6. Assemble the Pizza:

  • Drizzle a little olive oil over the base of the pizza dough.
  • Add a generous layer of mozzarella cheese over the pizza.
  • Evenly spread the fried potatoes, sliced onion, and sausage across the pizza.
  • Season with a pinch of salt and pepper.

7. Final Bake:

  • Bake the pizza for 10-15 minutes at 500°F until the cheese is bubbly and the crust is golden.

8. Finish with Bacon:

  • While the pizza is baking, cut the remaining bacon strips into ¼-inch pieces.
  • Once the pizza is out of the oven, sprinkle the bacon pieces over the top for an extra bacon kick.

9. Serve and Enjoy:
