Prep: 45 mins Bake: 15 mins Total: 1 hour Yields: 10-12 servings
Preheat oven to 400℉. Line a baking tray with aluminum foil and place an oven-safe wire rack on the tray. Lay the bacon on the rack.
Cook the bacon in the oven for 20-25 minutes, or until the bacon is browned and crispy. Remove from the oven (leave the oven on and preheated) and cool then roughly chop.
Gently roll-out the puff pastry. Use a large round or heart-shaped cookie cutter to cut out shapes of the puff pastry. Place the shapes onto another baking tray lined with parchment paper.
Layer two apple slices and two small brie slices over each puff pastry, leaving a thin border of pastry visible around the edge. Sprinkle some of the chopped bacon over top.
Scramble the egg in a small bowl. Use a basting brush to brush a thin layer of the egg wash over the exposed pastry edges.
Bake the puff pastries in the preheated oven for 15-20 minutes, or until the pastry is puffed and the edges golden.
Remove the stuffed pastries from the oven and allow to cool slightly. Drizzle with honey and enjoy while warm.
