1. Heat oil in a skillet over medium-high. Toss in the onions and water, and let them do their thing—slowly browning and caramelizing into perfection (around 45 minutes). Add water if they’re thirsty.
2.Crank the oven to 350°F.
3. In a bowl, mash cream cheese and mayo together until smooth. Stir in 1/2 cup Romano, the bacon, and those golden onions. Hit it with salt and pepper to taste.
