Shaved Brussels Sprout Salad

Shaved Brussels Sprout Salad

Cold Brussels Sprouts, Blue Cheese, Apple, and TB Bacon Salad! This combination of flavors is a perfect mix of savory, sweet, and tangy. Here’s how to make it:

Ingredients

  • 2 cups raw Brussels sprouts, trimmed and thinly sliced
  • 1 apple, thinly sliced (Honeycrisp or Fuji work well)
  • 4 slices cooked Tender Belly bacon, crumbled
  • 1/3 cup crumbled blue cheese
  • 1/4 cup dried cranberries or raisins (optional for a touch of sweetness)
  • 1/4 cup chopped pecans or walnuts (optional, for added crunch)

Dressing:

  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Brussels sprouts: Use a knife or mandoline to thinly slice the Brussels sprouts, then place them in a large bowl.
  2. Add the mix-ins: Add the sliced apple, crumbled bacon, blue cheese, cranberries or raisins (if using), and nuts (if using) to the Brussels sprouts.
  3. Make the dressing: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined.
  4. Toss the salad: Pour the dressing over the salad and toss everything together until well coated.
  5. Serve cold: This salad can be enjoyed right away, but it’s also great after sitting for a bit, as the flavors meld together.
Enjoy!
