Cold Brussels Sprouts, Blue Cheese, Apple, and TB Bacon Salad! This combination of flavors is a perfect mix of savory, sweet, and tangy. Here’s how to make it:
Ingredients
2 cups raw Brussels sprouts, trimmed and thinly sliced
1 apple, thinly sliced (Honeycrisp or Fuji work well)
1/4 cup dried cranberries or raisins (optional for a touch of sweetness)
1/4 cup chopped pecans or walnuts (optional, for added crunch)
Dressing:
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tsp honey
Salt and black pepper, to taste
Instructions
Prepare the Brussels sprouts: Use a knife or mandoline to thinly slice the Brussels sprouts, then place them in a large bowl.
Add the mix-ins: Add the sliced apple, crumbled bacon, blue cheese, cranberries or raisins (if using), and nuts (if using) to the Brussels sprouts.
Make the dressing: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined.
Toss the salad: Pour the dressing over the salad and toss everything together until well coated.
Serve cold: This salad can be enjoyed right away, but it’s also great after sitting for a bit, as the flavors meld together.
Enjoy!
