Palisade Peach Season + Tender Belly Bacon = The Ultimate Summer Salad

Ingredients

6 slices of Tender Belly bacon
2 ripe Palisade peaches, halved and pitted
4 cups fresh spinach
2 cups fresh arugula
1/4 cup crumbled feta cheese
1/4 cup balsamic vinegar
2 tablespoons pure maple syrup
1 tablespoon olive oil
Salt and pepper to taste

Directions:

Cook the Bacon:
Begin by cooking your Tender Belly bacon in a skillet over medium heat until crispy. Drain the bacon on paper towels and let it cool before chopping it into bite-sized pieces.
Grill the Peaches:
Preheat your grill to medium heat. Brush the cut sides of the peaches with a little olive oil. Place them cut-side down on the grill and cook for about 3-4 minutes, or until you see grill marks and the peaches start to soften.
Prepare the Salad Base:
In a large bowl, combine the fresh spinach and arugula.
Make the Balsamic Maple Reduction:
In a small saucepan, bring the balsamic vinegar and maple syrup to a simmer over medium heat. Reduce the heat to low and let it simmer until the mixture thickens slightly, about 5 minutes. Remove from heat and let it cool.
