Ingredients

For the casserole:
10 ounces Tender Belly No Sugar Bacon
1 loaf brioche bread, cubed
8 large eggs
2 cups heavy whipping cream
1½ cups whole milk
6 ounces cream cheese, softened
1 cup dark brown sugar
1½ Tablespoons vanilla extract
1 teaspoon ground cinnamon
½ teaspoon salt

For the topping:
1¼ cups all-purpose flour
½ cup dark brown sugar
¼ teaspoon salt
6 tablespoons unsalted butter, melted


Instructions

 

  1. Prep the Bacon: Preheat your oven to 400℉. Line a baking tray with aluminum foil and place an oven-safe wire rack on top. Arrange the bacon strips on the rack and bake for 15-20 minutes, or until browned and crisp. Let cool, then chop into small pieces.
  2. Make the Custard: In a large bowl, combine eggs, heavy cream, milk, cream cheese, brown sugar, vanilla, cinnamon, and salt. Blend with an electric mixer on medium-low until smooth (small chunks of cream cheese are fine). Stir in ⅔ of the chopped bacon.
  3. Assemble the Casserole: Cube the brioche into 1-inch pieces and mix into the custard. Grease a 9x13-inch baking dish and pour in the mixture, spreading it evenly. Cover with foil and refrigerate for at least 6 hours, or up to 12.
  4. Bake the Casserole: Preheat oven to 350℉. Remove casserole from the fridge and let it sit at room temperature for 30-45 minutes.
  5. Prepare the Topping: In a bowl, mix flour, brown sugar, salt, and the remaining bacon. Stir in melted butter until crumbly.
  6. Finish and Bake: Sprinkle the topping evenly over the casserole. Bake for 50-60 minutes, until golden brown and slightly puffed. Cool for 10 minutes before serving.
