Ingredients
For the filling: 1 Package of Tender Belly Signature Bacon(can also use Savory or No Sugar) 1 cup dark brown sugar, packed 1½ tablespoons all-purpose flour 3 tablespoons maple syrup ½ teaspoon vanilla extract
For the pastries: 2 premade pie crusts 1 large egg
For the topping: ½ cup powdered sugar ½ tablespoon whole milk ½ tablespoon maple syrup
Instructions
Preheat oven to 400℉.Line a baking tray with aluminum foil and place an oven-safe wire rack into the tray.
Arrange the bacon strips over the wire rack and bake for 17-23 minutes, or until the bacon is browned and crisp. Remove from the oven and allow the bacon to cool completely then roughly chop.
Increase oven temperature to 425℉. Line a baking tray with parchment paper.
Make the filling:In a medium bowl, combine the brown sugar, flour, maple syrup, vanilla extract, and half of the chopped bacon. Mix well.
Make the pastries: One at a time, unroll the pie crust. Gently roll it out with a rolling pin then use a sharp knife or a pizza cutter to carefully trim the edges to create a large square shape. Then, cut the square into thirds (should be 3 wide strips). Repeat with second pie crust.
Spoon the brown sugar filling onto one half of each pastry strip. Gently fold the second half over the first. Use a fork to crimp the edges closed then transfer the pastries to the prepared baking tray.
Scramble the egg in a small bowl. Use a basting brush to brush a thin layer of the egg wash over each pastry.
Bake the pastries in the preheated oven for 15-17 minutes, or until golden brown. Transfer to a wire rack to cool slightly.
Make the topping: In a small bowl, combine the powdered sugar, milk, and maple syrup. Use a fork to whisk together until smooth. Spoon the topping over each pastry, while they are still warm, and sprinkle with remaining chopped bacon.
Allow the pastries to continue cooling and the topping to harden. Enjoy!
