Bacon Weave Stuffing

Our Bacon Weave Stuffing takes your holiday carbs to the next level—because let’s be real, the only thing better than stuffing... is bacon wrapped around it. Crispy, golden bacon lattice on top, tender, buttery stuffing underneath—this dish is a certified showstopper. 

Ingredients:

1 lb Tender Belly Bacon
1 loaf of day-old bread, cubed (or your choice of stuffing bread)
1 medium onion, diced
2 celery stalks, diced
2 cloves garlic, minced
1/2 cup unsalted butter
1/2 tsp dried sage
1/2 tsp dried thyme
1/2 tsp dried rosemary
2-3 cups chicken or turkey broth (depending on how moist you like your stuffing)
2 large eggs
Salt and pepper to taste
Optional:fresh herbs (parsley, sage, or thyme) for garnish

Instructions:

  1. Preheat your oven to 375°F.
  2. Line a baking sheet with parchment paper or foil.
  3. Lay out half of your Tender Belly bacon strips vertically across the sheet, side by side.
  4. Take the other half of the strips and weave them horizontally, over and under, creating a bacon lattice or "weave."
  5. Set the bacon weave aside. It will go on top of the stuffing at the end.
Make the Stuffing:

 

  1. In a large skillet, melt the butter over medium heat.
  2. Add diced onion, celery, and garlic to the pan, cooking until softened (about 5-7 minutes).
  3. Add the dried sage, thyme, rosemary, salt, and pepper, stirring until fragrant (about 1 minute).
  4. In a large mixing bowl, combine the bread cubes, sautéed vegetables, and herbs.
  5. Slowly pour the broth over the bread mixture, stirring gently to combine. Add enough broth to moisten the stuffing but not make it soggy.
  6. Beat the eggs in a small bowl, then mix them into the stuffing mixture to help bind it together.

Assemble & Bake:

  1. Transfer the stuffing mixture to a greased casserole dish.
  2. Gently place the bacon weave over the top of the stuffing, making sure the entire surface is covered.
  3. Place the casserole dish in the preheated oven and bake for about 30-40 minutes, or until the bacon is crispy and the stuffing is cooked through and golden brown.

Serve: Let the stuffing cool slightly before serving. Garnish with fresh herbs if desired, and get ready for rave reviews!
