This easy recipe comes from Jeonla province, the southwestern part of Korea. The main stars of this soup are Tender Belly pork belly and Korean zucchini, although you can use any cut of pork and any variety of zucchinis and it will be just as delicious.

This traditional Ukrainian borscht soup can be made with Tender Belly baby back pork ribs, an array of vegetables, and fresh shelled beans (with the option to leave those out).
